Coconut Curried Lentils
 Creamy Red Lentils cooked in warming Indian spices with chunks of Sweet Potatoes, Greens and Coconut Milk

Cauliflower Rice
Dressed up a bit with Parsley, Garlic, Lemon, Onions

Cocoa-Hazelnut Energy Bar
Almonds, dates, hazelnut butter and coconut crust
topped with creamy dark & coconut chocolate glaze

DAY 2

Colors of Spring Salad
Organic Hearts of Romaine & Spring Greens, shaved Fennel, Rainbow Carrots, Snap Peas, Sunflower Sprouts, sliced Strawberries & crushed Pistachios
Cilantro Citrus Vinaigrette

Tunisian Seven-Vegetable Tagine
 Aromatic Spices of Coriander, Star Anise, Cumin, Ginger, Turmeric, & Cinnamon, 
 are slow roasted in this stew filled with Chickpeas and melange of Vegetables

Sprouted Long Grain Brown Rice
